Meal Mondays: Homemade Beef Soup Recipe

I went to boot camp one day and we had this 1-minute drill called 15 touches.  That means you have to run back and forth between 2 lines at least 15 times before 1 minute is up.  You are sprinting back and forth trying not to get dizzy and trying to run straight to shave off any extra seconds off of your time.  After about 30 seconds of this TRUST me you are wiped out and you have another 30 seconds to go.  They tell you to go all out in the beginning and not try to make up time after 30 seconds is called because you will be out of energy.  It torches fat and really helps to strengthen your heart.

One of the very FEW times I actually made 15 touches within a minute, I had a burst of energy and did not get tired.  I had to think about what I ate and I figured it out.  My mother-in-law made her delicious homemade beef soup and I gobbled it up.  YUM!  I then went to boot camp the next morning and was full of energy during our 1-mile warm up run and then during the minute drill.

My mother-in-law is a sweetheart so she shared her beef soup recipe with me and now I am sharing it with you.  If you are not a beef eater simply replace with chicken or turkey.  It is amazingly delicious and nutritious.  I hope you like it as much as I do!

Ingredients:

Pot roast chopped up (I used left over filet mignon)

Frozen mixed vegetables

1/2 cup macaroni noodles

Salt to taste

Sugar to taste

Black pepper to taste

Cooking Instructions

Chop up beef in bite-size pieces.  Left over pot roast is best.

Heat pot with about 1/3 cup water over medium heat.  Add meat and continue to heat.

After about 10 minutes of heating up add frozen mixed vegetables.

Add top to the pot and let cook for about 15 minutes.  Add 2 cans of tomato soup to the pot and let heat another 10 minutes.

Add salt, pepper and sugar to taste.  Add macaroni noodles and cover pot.

Let cook until macaroni noodles are fully cooked.  Serve hot!  Your tastebuds will be singing and thanking you!!  Try it and please leave a comment below telling me how much you like it or how much you changed it up.
