For this week’s Workout Wednesday Link Up I decided to share a delicious taco salad my running buddy told me about. It’s quick, inexpensive and EASY!!! We went running on the NCR Trail a few weeks ago and on our way home stopped by Wegmans to pick up a few ingredients to make this salad POP! Did I also say it was very FILLING? YUMMY!!!!
Ingredients:
Romaine lettuce
Ground turkey
Taco seasoning
Tomatoes
Salsa
Green onions
Blue organic corn chips (optional)
Light sour cream (optional)
2% cheddar cheese (optional)
Cooking Instructions
Brown the ground turkey
Add taco seasoning and cook until done.
Place chips on plate and cover with romaine lettuce. Feel free to warm up the chips in the oven on 350 degrees for about 10 minutes if you want them extra crispy.
Add cooked ground beef and salsa along with other condiments listed as optional above.
VOILA lunch is served!!!! Get as creative as you like – either way it is DELICIOUS!!!
