Hey Femme Fitale Family!!!  If you’ve been catching me on Instagram then you know I recently purchased a Nutribullet 900 which I am extremely excited about.  

What came with that awesome purchase was a healthy recipe book and that is where I found this delicious recipe.  I tweaked it to my liking but the basic recipe came from the Nutribullet Healthy Recipe book.

I hope you enjoy this recipe as much as my family and I did.  According to my aunt it had the right amount of heat.  

My children lapped it up and didn’t even miss the meat.  Bon appetite.

Ingredients

  • 4 cloves garlic
  • 4 tomatoes (I used tomatoes fresh from the garden)
  • 1 cup chopped carrots
  • 1 cup chopped zucchini
  • 1 cup chopped onion
  • 1 cup green and red bell pepper
  • 1 jalapano pepper chopped
  • 1 can each of kidney beans, pinto beans and black beans drained
  • 2 TB dried oregano
  • 1/2 cup veggie broth
  • 1/2 TB olive oil
  • 1/2 packet McCormick’s low sodium chili seasoning

Farm Fresh Tomatoes

Directions

  1. Place garlic and tomatoes in food processor and pulse until coarsely chopped
  2. Heat olive oil in pan and add vegetables and sautee until tender
  3. Add remaining ingredients to the pot, bring to a boil and then lower to a simmer for 1 hour
  4. Serve with a side of blue corn chips of choice

    I love chili! It’s hard to think too much about it right now because it’s so hot, but I’m saving this one for sometime around December (because that’s about the time it will finally cool off here in the desert 🙂 ).

    I LOVE chili!! I always make turkey chili and in the fall/winter pumpkin chili. SO good!

    That sounds like a tasty chili! We aren’t veggie here, but my husband is never opposed to a veggie meal, if it tastes good.

    YUM!!! I made a veggie chili once for a bunch of meat lovers and no one knew it was meatless! Though I do like a little ground turkey now and then.

    I love chill and am looking forward to fall when we have Sunday Soups at our house. My husband is usually the chili maker at our house and he makes the best. I can’t wait to share our recipe. I am going to have to give an all-veggie chili a try.

    I love chili! I can’t wait to take out my crockpot this fall and make all sorts of slow cooker recipes, including chili. I’ve never tried vegetarian chili though so I’ll have to bookmark this!

    This is definitely my kind of chili dish! In addition to the beans you listed, I add black eyed beans and chick peas to mine and my kids love it too… Great recipe and source of healthy proteins. Yum! 🙂
