I received this delicious black bean taco recipe through my Dinnertime subscription from work and this had me FULL for hours!!! You definitely want to try this. This is a nice vegan meal (leave off the cheese and sour cream) the entire family will love. The black beans are full of stomach-filling fiber and the salsa gives it a very nice kick! I think you all will LOVE the taste of this one.
Ingredients
- 1/2 tablespoon olive oil
- 1/2 onion, diced
- 1 1/2 cloves fresh garlic, minced
- 1/2 green bell pepper, chopped
- 1 14.5 oz can or jar canned black beans, rinsed, drained and mashed
- 1 tablespoon yellow cornmeal
- 1 1/4 tablespoons ground cumin
- 1 teaspoon paprika
- 1 teaspoon red pepper flakes
- 1 teaspoon chili powder
- 1/2 cup salsa
- 4 8-inch flour tortillas
Preparation
- Saute onion, garlic, and bell pepper in olive oil until tender.
- Stir in mashed beans.
- Fold in cornmeal..
- Add cumin, paprika, cayenne, chili powder, and salsa.
- Cover, and cook 5 minutes.
- Spoon into warmed tortillas and serve.

These were definitely a winner. My job offers this recipe service at no additional cost to us and I ENJOY IT! I make a bunch of stuff from it and the food is really tasty. Oh yeah!
