Southwest Coho Salmon

If you recall I won some delicious Sizzlefish a few weeks ago and I also won SOME MORE!!!!  Yes!  I am definitely feeling lucky winning all of these giveaways.  I finally got through the majority of the fish in my first cooler and Coho Salmon is one of the last few pieces left.

Wegmans Basting Oil

My favorite seasoned cooking oil.

I don’t know about you but I have never tried Coho Salmon so I wasn’t sure what to expect.  I guess I can expect it to taste like..well…..SALMON but it was fun to eat nonetheless.

I decided to make Lindsay Cotter’s Southwest Rub  used in her Baked Southwest Trout with Sage recipe and can I tell you this fish had NO CHANCE.  It was quick, easy and most importantly very tasty.

Ingredients for Confetti Fish

  • 2 – 4 oz piece of Coho Salmon
  • 1-2 tsp sweet chili pepper (or you can use chili powder)
  • 1/2 tsp mustard powder or cumin
  • 1 teaspoon dry onion or garlic powder
  • 1/2 teaspoon paprika to taste
  • 1/2 teaspoon each sea salt and black pepper
  • 1-2 teaspoons Wegmans Basting Oil or any favorite olive oil

Preparation for Rub

  1. Mix all ingredients together except for the salmon

Preparation for Fish

  1. Prepare the rub and rub it all over your defrosted pieces of Coho Salmon.

Instructions

Preheat oven on 350, place seasoned fish on lightly greased cookie sheet.  Bake for 15 minutes or until opaque and cooked through.  Serve with your favorite vegetables.

    This sounds fantastic. I get to try Sizzlefish in a few weeks and I am so excited! I love all sorts of fish, but one that I do not care for is cod. I just don’t like the texture! But otherwise, I am pretty open.

    Looks like you are really enjoying your Sizzlefish! I never use frozen fish but it’s good to have on hand for those days where you have no idea what’s for dinner!

    Looks yummy! My favourite fish to eat is Mahi Mahi with a nice mango chutney.

    I am a salmon eater all the way. LOVE IT! Sizzlefish is amazing, I am on my 2nd box of fish from them. Love it.

    That looks and sounds yummy! I eat salmon a lot so I am definitely going to try this recipe. Not to mention I LOVE Wegmans so any excuse to go there to get anything, I’m all for it!!! Thanks for sharing!

    Yes, I agree with Lindsay. That basting oil sounds perfect. I love all of these new great fish recipes as we have been trying to eat more fish in our house.

    This is SO yummy! I love fish in general and usually bake my salmon with basil, salt pepper and lemon juice on top, but this mix sounds REALLY good.
