Easy Baked Sweet Potato

Did you know not all carbs are bad?  There are some carbs that were meant to be eaten and burn slowly and does not spike your blood sugar levels.  Sweet potatoes are just that food.  Today I share how to bake one easy, breezy quick, fast and easy.  No mess, no fuss and nutritious.

Ingredients

  • 1 medium sweet potato

Preparation

  1. Clean the sweet potato

Instructions

Put the sweet potato in the oven, turn on the oven to 425 degrees for 45 minutes.  Lay sweet potato directly on rack.  Once finished, remove from oven and top with your favorite toppings.  Serve with veggies!

      It’s really easy to burn out on them, yeah. My wife and I do eat a ton of sweet potatoes, and we’ve had to start making them more and more exotic to keep our attention. Though, we still do eat just sweet potato with salt/pepper/garlic pretty often.

      I think variety in preparation really does help make it so that it’s not just “another sweet potato” day in and day out.

    Sweet potatoes are the best. I love that they’re filling and they kind of feel like a treat. I like pan roasting mine in coconut oil, too.

    I LOVE sweet potatoes! Especially cooked in the oven…they are worth the extra time. I like to make a few on the weekend to eat during the busy work week! 🙂

    I love sweet potatoes, but I don’t eat them nearly enough! I love sweet potato pie and just plain roasted sweet potatoes.

    I love baked sweet potatoes, especially topped with some tasty beans! Honey Baked Lentils or Mexican-spiced black beans in a sweet potato is comfort food that makes me feel great (instead of lazy) after eating.

    I have a bad habit of cooking my sweet potatoes in the microwave. Haha! I will do better next time.
