I had an awesome workout week and I also WON a free cooler of Sizzlefish! Sometimes you just have to enter those Instagram contests and great things just may happen. I went online and selected from a variety of fish options such as:

See what I’m saying – they have something for everyone. Check out what came in the cooler, FISH FOR DAYS!!!! I was so excited when I opened it. There were actually 14 – 4 oz pieces of fish of all types.
Now let me share the recipe I made with you as it turned out superb and I am sure you and your family will enjoy it too.
Ingredients for Confetti Fish
- 2 – 4 oz of Haddock
- 1/4 cup fresh lime juice
- 2 TB honey
- 1/2 teaspoon cumin
- 1 clove garlic minced
- 1/2 tsp salt
- 2 TB canola oil
- 2 TB Extra virgin olive oil
- Fresh ground pepper to taste
- 1/2 medium green bell pepper chopped in 1/4 inch pieces
- 1/2 medium red bell pepper chopped in 1/4 inch pieces
- 1/2 medium red onion diced
- 1 jalapeno pepper diced. Remove seeds for less spice
- 10 cherry tomatoes chopped
- 1 can of corn drained
- 1 can of black beans drained and rinsed
- 1/2 cup cilantro
Preparation for Confetti
- Prepare the “confetti” by mixing all ingredients (except the haddock) in a bowl and let marinate in fridge at least 30 minutes.
Preparation for Fish
- Season fish with your favorite seasonings. I used all-purpose dill mix with garlic by Pampered Chef, fresh ground black pepper and Chef Paul Prudhomme’s Magic Seasoning Blend Seafood Magic.
- Heat 2 TB of extra virgin olive oil in large skillet on medium heat.
- Place fish in pan and sear it on both sides for about 5 minutes each until opaque and well cooked.
- Remove from skillet and let cool.
- Plate fish and place “confetti” on top.
- Serve with your favorite vegetable

The dish look delicious. I have to say the name is not appealing. Maybe Black bean and corn Haddock or Black bean salsa Haddock? the word confetti is making me thing of sugar sprinkles!

That fish looks terrific. I very rarely eat fish because I am incredibly picky – in fact I will only eat it if my husband makes it so I know I won’t have an allergic reaction. And that looks like it will be on my request list next!

The recipe you posted looks really good. I wonder if you could use tilapia as well? I had haddock a while ago and I cannot quite remember the taste/consistency.
