When I was in graduate school at Georgia State University in Atlanta, GA I had a classmate who had a boyfriend who could COOK! He was from Louisiana and he would cook meals for us while we studied at his home. One of his specialties was a Shrimp Corn Soup. He served it with a turkey sandwich but let me say it wasn’t a regular turkey sandwich. It was on a delicious baguette with special aioli and it was simply DIVINE! This soup is the ultimate comfort food.
Years later, I contacted my friend for this recipe and his boyfriend sent it without hesitation! Gotta love that Southern charm. I made it for my family on another Maryland snow day and they loved it. I hope you try this recipe because I seriously believe you will LOVE IT as much as I do.

Ingredients
1/2 cup oil
3 cups onions, chopped
1/3 cup bell pepper, chopped
1 can creamed corn, large
1 1/2 quart water
2 lb cleaned raw shrimp
1/2 cup green onions, chopped
1/2 cup flour
1 cup celery, chopped
1 small can whole kernel corn
salt, pepper, garlic salt and sugar to taste

Preparation
Make roux of oil and flour. Stir until golden brown over low heat. Add onions, celery, and bell pepper. Cook about 10 minutes to slightly wilt, stir often. Add corn, water and seasonings. Simmer 30- minutes, then add shrimp and green onions. Cook 20 minutes. Serve.
