My family is always asking me about making meatballs and I typically go and cheat by buying frozen ones out of the store. Well NOT TODAY. I decided it was way too easy to simply make them from scratch and boy was I right.
These meatballs are moist, delicious, filling and full of vegetables. The kids gobbled it up when they normally would not touch spinach so I consider this a big win.

This recipe is a guide – feel free to get creative and add ingredients you and your family enjoy eating. I am sure they will turn out great.
Ingredients:
- 1 lb of ground turkey (organic)
- 1 cup frozen spinach defrosted and drained (I squeezed out excess water)
- 1/2 cup curly parsley
- 1/2 onion sauteed in olive oil
- 3 cloves garlic sauteed in olive oil
- salt
- pepper
- 1 egg
- 1/2 cup bread crumbs
- italian seasoning
- red pepper flakes to taste
Instructions
Heat oven to 400 degrees. Cook the onions and garlic in olive oil on stove top and let cool. Then added all ingredients to the bowl and use hands to blend and form into meatballs. used my hands to blend and form into balls. Place on greased cookie sheet at least 2 inches apart. Put in oven and let cook for 30 minutes.
Serve with homemade spaghetti sauce served over whole wheat pasta, rigatoni or alone.

Makes about 9 to 12 meatballs depending on size.

I am totally about these, minus the bread crumbs! In fact, I believe Gwyneth Paltrow has a version of these balls (she calls them burgers) that I cooked up a while back and I have to say, it’s probably my favorite recipe I’ve ever made!!

i always buy trader joe’s turkey meatballs, but these would probably be way healthier and i could probably store them in the freezer!
