Meal Mondays: Cauliflower Crust Pizza

I found an awesomely delicious cauliflower crust pizza recipe on Pinterest and HAD to try it myself.  I can’t even take the credit.  Cosmo Hippie Chef has a recipe OUT OF THIS WORLD.   Now, my picky eater children tried it and did not finish it but that just left MORE for my husband and me to DEVOUR!!!  Try it – I believe you will like it.

Ingredients

1c. cauliflower, pulsed into tiny looking like rice

1c. shredded provolone cheese

1 garlic clove, chopped

1 egg, beaten

1 tsp. dried basil or oregano

1/4 tsp. garlic salt

Pepper to taste

Raghu pizza sauce

Pizza stone

Bowl

Food processor

Spoon

Measuring spoon

Measuring cup

Preparation

Preheat oven to 450 degrees Fahrenheit.  Cut the cauliflower and pulse in a food processor until it breaks up and looks like rice.  You can also use a cheese shredder (a bit messier).   Place 1c. cauliflower grain in bowl that is safe for the microwave and cook on high for 4 minutes. While the cauliflower cooks place the beaten egg, chopped garlic, dried herbs, garlic salt and pepper in a bowl, mix to combine. Next add the shredded cheese and mix again.

When the cauliflower is done cooking let cool for just a minute and then add it to the cheese mixture. Mix to combine all the ingredients. Scoop the mixture onto the pizza stone and flatten out as much as possible for “thin crust” and form a good sized circle.

Place the cauliflower crust in the oven and bake for 15 minutes. After 15 minutes turn oven off and leave the crust in for another 5 minutes. Take crust out of the oven and pour Raghu pizza sauce over the top.  Be careful not to saturate.  Then top with whatever toppings you want.  Make sure that all of your toppings are cooked accordingly because you are just going to place the whole pizza under the broiler for just a minute to warm through or melt any extra cheese you might add).

Remove from under broiler, let cool a bit and ENJOY!  Bon Appetite!

    I always steam my cauliflower and spend soo much time trying to get the water dried out of it, next time will try just microwaving it by itself! You just put the cauliflower in the microwave with no water at all?

      Yes microwave and five minutes is all ya need.
