Meal Mondays: Roasted Cauliflower Recipe

This is one of my absolutely favorite clean eating recipes.  As a kid, who knew I would grow up enjoying the taste of roasted cauliflower.  Actually the taste of any cruciferous vegetable roasted really delights my tastebuds.  Here is a quick and easy recipe for all of you I hope you enjoy!  If you try it please post a photo of it and tag me on Instagram @Femmefitalefitclub and use hashtag #FFFCRoast.  I love looking at pictures of FOOD.

Ingredients:

Head of cauliflower

Wegman’s Basting Oil (or plain olive oil if you like)

Himalayan Pink Sea Salt

Tools needed:

Knife

Cutting board

Bowl

Cookie sheet

Parchment paper

Instructions:  Heat oven to 350 degrees.  Cut up the cauliflower in bite size pieces.  Toss in a bowl with about 2 to 3 tablespoons of Wegman’s Basting Oil and 1 tsp of salt.  Make sure everything is well covered.  Once the cauliflower is well covered (do not overdo the oil because oil is FAT), cover the cookie sheet with parchment paper and lay the cauliflower on the parchment paper in a single layer.  If you do not lay out in a single layer the vegetable will not cook evenly.

Cook in the oven for 30 minutes.  Once done, serve as your favorite side or as the entrée.  I can eat the entire batch if my family let me.  They come out so tender and “buttery”.  Simply delicious.

    I might try this recipe because I love cauliflower. My favorite recipe is garlic cauliflower by Birdseye. I tried duplicating their recipe but I can’t get it just right.

      You don’t need that frozen stuff. Homemade is best.

    My kids have always loved cauliflower and broccoli so I try to incorporate them into our lives as often as possible.
